Twix Bar Cheesecake

I’m not really a huge cheesecake person. In my mind, cheese and cake are not two things to be mixed. Much like nutella and wontons. The family likes cheesecake though, so I decided to give this recipe a whirl for Thanksgiving 2010.

Thanksgiving is interesting at my house. We don’t have extended family in the area, so instead we do Thanksgiving with a family from down the street. For the longest time it was always boys (I have 2 older brothers and the other family had 2 boys around their age too) and me. This past year I brought some friends home from college for Thanksgiving and finally wasn’t the only girl. I guess the point of that story was that we always have a lot of hungry mouths to feed at Thanksgiving.

Well, they all enjoyed this one. I can’t say I was too crazy about it… I mean, it was cheesecake after all. But there were a lot of chunks of Twix… which made it enjoyable. It’s pretty decadent, so despite the fact that it’s only 9 inches in diameter, there was enough to satisfy 11 people (there may have been leftovers even). So if you’re a cheesecake fan, a Twix fan or both, this is a pretty good recipe for you.

20 Oreo cookies
3 Tbsp melted butter
16 oz cream cheese
1/2 cup sugar
2 large eggs
22 fun-sized Twix bars, chopped (split into 16 and 6)
caramel syrup

Crush the Oreos in a plastic bag. Mix in melted butter. Press into a 9″ pie dish and place it in the freezer. Allow to cool for ~30 minutes.

In a bowl, beat cream cheese, sugar, and eggs together with a hand mixer until smooth. Stir in the 16 chopped up Twix bars. Remove crust from freezer and pour mixture into crust. Bake at 325 degrees for about 35-45 minutes until set. Let cool completely.

Drizzle with caramel and garnish with remaining chopped Twix bars. Chill for a few hours until firm.
